KORVAPUUSTI

2 cups milk
1 1/2 pkg dry yeast
2 eggs
1 cup sugar
1 tsp salt
1 Tbsp cardamom
8- 9 cups flour
1 1/2 sticks butter or margarine
filling: softened butter, cinnamon, sugar
Basting: egg, pearl sugar

Get the ingredients ready the previous night.
Heat the milk to lukewarm
Add yeast, eggs, sugar, salt and cardamom, mix
Add enough flour to make thick, elastic mixture. Beat vigorously
Mix rest of the flour in portions, kneading well. The dough should not be too stiff
Add the butter last. Knead well until the dough separates from the side of the bowl.
Let the dough rise, covered until almost doubled (one hour)
Turn the dough on to a floured surface, divide into two parts.
Roll each into 12" x 16" rectangles. Spread softened butter on the rectangle and sprinkle with sugar and cinnamon.
Roll the rectangle into 16” long tube, pinch the seam closed
Cut into 16 - 20 diagonal pieces, place on the cookie sheet wide side down and flattened with a side of the finger, so that sides spread out Let rise covered 30-50 min
Baste with egg and sprinkle with sugar
Bake in 375 F for about 10 -15 min
